dechen hawk at bitto bistroPlease join us in welcoming Dechen Hawk to Bitto Bistro!

Rocked to sleep as a child to Stevie Wonder, Dechen Hawk's music ranges from beautiful ballads to serious backbeat funk. Hawk's sound is a refreshing new addition to the Neo-Soul movement. Though musical his whole life, it wasn't until the death of his father at age 14, and the search for a way to express that loss, that Hawk found his calling as a songwriter and multi-instrumentalist. It was also at this time the Hawk was introduces to the music of Jeff Buckley, which influenced him heavily during this time of grief and musical exploration. Hawk's desire to create and express the joy and fragility of life has kept him busy for the past 20 years performing locally and internationally, sharing billings with such legends as Bruce Hornsby, Leon Russell, R.E.M., Ty Burhoe, Ron Miles, and the Fun Lovin' Criminals. During this time Hawk has written hundreds of songs, released 6 albums, been in numerous bands, played the role of talent buyer for various venues.

Originally from Austin, Texas, Hawk moved to Boulder when he was just 5 years old. “Colorado has always been my home,” he said in a CRAVE interview. “In my late teens and early 20s, I got my start as a musician performing regularly at the Pennylane coffee shop here in Boulder.”

“I feel blessed and I am grateful to be able to do what I love for a living in such a beautiful place.” – Dechen Hawk

Hawk describes his Colorado lifestyle as a “wonderful blend of nature and city life.” When he’s not teaching music privately, Hawk spends his days enjoying the Colorado outdoors with yoga, biking, hiking, or just hanging out by the creek with friends. “Moving my body is important to my health and peace of mind. Nature always helps to push my reset button,” he said. Most nights you can find him performing around town as a guest singer/musician or supporting other local talent from the audience.

A 2009 graduate of Naropa University, Hawk studied with Bill Douglas, Art Lande, and Janet Feder.

Orchard Wine Cellar Movers and Shakers This Week

  • Bonavita Red

    #1 Bonavita Red

Made from four grapes harvested later than usual to achieve a greater ripeness and smoothness. A deep and inky wine, with ripe plum and blackcurrant aromas. Nice ripe fig and cherry with chocolate and licorice flavors. Just enough oak to give it some backbone.
    (Holding the #1 spot)

  • Sweet Sunset Chocolate Merlot

    #2 Sweet Sunset Chocolate Merlot

First lets say that this is Not ChocoVine. This wine is actually made with eighty five percent Merlot and than has natural chocolate cream added to the mix. This is the wine for anyone looking for sweet red or the chocolate lover at home. Great gift for the holidays. (behind by 6 bottles)

  • Tintero Moscato

    #3 Tintero Moscato

Sori Gramella refers to the one of the only single vineyard Moscatos, and Marco is the only producer to bottle this striking limestone amphitheater commercially. Once the 30 year old vines give up their bounty, and the grapes are harvested and pressed, they are kept in stainless steel at a low temperature to prevent fermentation until an order is received in order to provide the freshest wine possible. (behind by 20 bottles)

  • Carro Monastrell

    #4 Carro Monastrell

The higher altitudes of Yecla result in a more aromatic, fresher style, making this wine a very easy sipper. Ripe black fruits, plum, licorice, and a hint of pepper. The gentle tannins balanced perfectly by its acidity, this one you've got to try! (behind by 7 bottles)

Fun New Arrivals

  • Maimai Syrah

    Maimai Syrah

So pretty. Brings a clear nose of Gimblett Gravels terroir beneath lush soft blue and black fruit with lovely violet and lavender notes. Palate is clean, balanced and very approachable. Just a hint of the Northern Rhone's meatiness but mostly bright fruit and enough acidity to hold it in check. Maybe the best NZ Syrah out there??

  • Three Brooms

    Three Brooms

This single vineyard, certified sustainable sav blanc shows lovely white flower, chili pepper, and gooseberry on the nose with some sandy mineralogy. Very nice weight and balance showing passion fruit, ripe apple flavors. Such a pleasant surprise is the roundness, the acid is lively and energetic but not abrasive.

  • Porron Decanter

    Porron Decanter

The porron wine pitcher is a festive way to serve wine. Either use as a decanter or just pick up the porron and tilt it so that a thin stream of wine pours directly into your mouth! It takes some skill, but it is fun at a party to see how well you and your friends master the technique. Each porron holds 1 liter, which is a perfect size to hold a bottle of wine.

  • Obsidian Cab

    Obsidian Cab

A wonderful classic CA Cab with solid structure from the altitude and Hungarian oak. Reserved and dark on the nose with aromas of blackberries, hints of black licorice and coffee. Really nice and elegant. Touch on the masculine side with no jammy, jelly jar junk here. Wonderfully different.
